Right? Because who can ever resist getting up to the Healthy Hearty Waffles or… To these healthy, yet low-calorie, yet filling, yet high-protein, yet all-natural cookies!     The Best Healthy Breakfast Cookies – 2.5 cups oat bran – 1 cup low-fat farmer cheese or ricotta cheese – 2 eggs or 3 egg whites* – 2 oz butter or oil – 1/3 cup honey* – 1 tsp vanilla extract – 1/2 tsp baking powder – 1/4 tsp salt 1) Preheat the oven to 350F and line a cookie sheet with some parchment paper.  2) Whip the eggs with honey. Add the oil or the softened butter, vanilla and farmer cheese.  3) Whisk the bran with the baking powder and salt. Add to the wet mixture and stir until all the ingredients are incorporated.  4) Using a cookie-scooper or a tablespoon, scoop out the cookies (about 1 heaped tbsp per cookie) on the cookie sheet about 1/2 inch apart from each other.  5) Bake for about 20 minutes or until the tops are golden.  6) Cool the cookies and enjoy! 🙂 *The whole eggs land richer and crumblier cookies, but the egg whites cut down the calories! *The 1/3 cup of honey makes these cookies sweet enough for me, but if you have a real sweet tooth – use 1/2 cup instead! 🙂  SaveSave

  1. Oh yes, cookies for breakfast I like the way you think! Seriously though these look amazing and an easy to-go kinda meal and even an easy snack, love it! Lately our go-to breakfast has been a Glucerna shake. It’s easy and my hubby can help himself. Having said that I’m thinking we’ll be doing some smoothies as head into fall.
