Long time no recipe! 🙂 The blog had gone through a few changes over the past few months with me focusing a lot on fashion and style… But… that doesn’t mean that I’m giving up on sharing my guiltless sweets with you! 🙂 And today I am so excited to share this new, updated recipe for these Low-Calorie & Low-Sugar Marshmallows! (Especially that many of you liked my Healthier and Super-Healthy Marshmallow recipes!) 🙂
But these… these are… well… they are even better! Seriously! And that’s because of a secret ingredient that I began using after my trip to Russia! This secret ingredient is very popular in Russia and also in some Asian countries. Oh, and it’s super-popular with the vegans. What’s the ingredient you’re asking?
It is Agar-Agar!
Yes, agar-agar, aka the “vegan gelatin” that works very similarly to the regular gelatin (it jellies the liquids), but it also has its own very unique qualities that makes it indispensable in certain desserts! And here’s why: not only once it’s set it doesn’t melt no matter how much you reheat it.
It also gives the jellied foods a very unique body and texture that is more solid than when using the gelatin. But the only way that you can really see the difference is if you taste a dessert made using agar vs. the one made with the gelatin. And let me tell you – that difference is huge! Well… using agar does take away a bit more time than the gelatin, but it just sooo worth it!
An important note:
Although the original “Russian Marshmallow” (aka zephyr) is made with agar-agar only, if you aren’t going to use pounds and pounds of sugar (that help create the “body” of that dessert), you’ll have to use the gelatin as well. I honestly tried to only use the agar but because my marshmallows are extra-low-sugar (4 tbsp compare to the 2-4 cups in a traditional recipe) – what came out was a mess. But with both agar and gelatin this dessert sets WONDERFULLY! P.S. I So hope that you’ll give this recipe a try, though! 🙂 Because I am seriously addicted! I make it at least a few times a week, and when it’s gone – I make it again! 🙂
The Best Low-Calorie Marshmallows
The Best Low Calorie Marshmallows are just as delicious as the traditional sugary treat, only they are all-natural, high in protein, low-sugar and completely guiltless!
- 4 egg whites pasteurized
- 4 tbsp fructose sugar*
- 1 tsp vanilla extract
- 1/4 tsp cream of tartar
- 1 1/2 tsp agar powder
- 2 envelopes gelatin
Dissolve the gelatin in 3-4 tbsp cold water. Set aside.
In a pot dissolve the agar in 1/4 cup water. Add the vanilla extract. Heat the agar mixture over a medium flame and bring it to boil. Boil for 2-3 minutes, stirring constantly. Add the gelatin and stir until the gelatin is completely dissolved and liquified. Cover the pot and set it aside.** (see notes)
Whip the egg whites with the cream of tartar until the soft peaks form. Begin adding the sugar and whip until the hard peaks form.
Test the agar mixture. By now it should be warm, but not hot. With the mixer still whipping the meringue begin pouring the agar mixture into the egg whites. Whip for another 2-3 minutes until everything is completely incorporated.
Pour the marshmallow mixture into a container lined with some parchment paper (to make it easier to take it out of the container once it's set) and put in the refrigerator for at least 4 hours or overnight.
Once the mixture is hardened and set, take it out of the container and cut into the cubes. Enjoy!
