These Super-Fudgy, Low-Calorie Sweet Potato Blender Brownies are super-easy & fast to make, extra-low-fat & low-calorie, Paleo and Gluten Free! Also they are very fudgy and extra-delicious - they're simply the best! Um… Looks like a long name for a brownie recipe, huh?!

And it also sounds like… a little bit of bragging, doesn’t it? 🙂

Also they are very fudgy and extra-delicious - they're simply the best! …But you know what? They ARE the BEST! (Um… you must already know how I like to always explain myself away… 🙂 But is it bad?… Um… I think that if taken in moderation (just like with everything else in life) a HEALTHY BALANCE can be achieved! I mean… I shouldn’t ALWAYS say something that I’ll then need to explain away. But never stating anything controversial isn’t much fun either, right? 🙂

OK. So now that I’ve explained why it’s OK to be explaining myself away… Let me explain away why I’m set on thinking that these are my best brownies yet!! 🙂

  • They’re extra low-calorie! Yes, to the point that they make a perfectly-skinny breakfast! Because how much calories can 1 TBSP of oil and 3 TBSP of honey add to all the other low-calorie and low-fat ingredients?! I’ll actually tell you a secret: sometimes I don’t have time/energy/desire to bake. I just don’t. But I can always stick some sweet potatoes in my oven the night before. And… viola! My breakfast is done! I eat my sweet potatoes cold, with a little salt sprinkled on them. With their skins (unless there’re blemishes that need to be removed). And they’re heaven!   • They’re very fast and easy to make! Put all the ingredients in the blender. Press the pulse button. And… done! Just pour the batter in the pan and bake it! That’s why it’s one of my most favorite go-to recipes for when I don’t have much time/energy/desire to mess around in the kitchen! (Um… because as much as I LOVE-LOVE-LOVE baking… sometimes Netflix just sounds like a better idea 🙂

Best Fudgy Low-Calorie Sweet Potato Brownies

These Super-Fudgy, Low-Calorie Sweet Potato Blender Brownies are super-easy & fast to make, extra-low-fat & low-calorie, Paleo and Gluten Free! Also they are very fudgy and extra-delicious - they're simply the best!

Ingredients

  • 2 cups sweet potato puree from 3 large or 4 small baked sweet potatoes
  • 3 egg whites
  • 1 oz oil
  • 3 oz honey or maple syrup
  • 1/4 cup cocoa powder
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350 F and line a brownie pan with some parchment paper or oil it and dust it with some flour.
  2. Put all the ingredients in your blender and blend at high speed until all the ingredients are blended and incorporated.
  3. Pour the brownie batter in the pan and bake for 40 min-1 hour depending on how super-fudgy you want your brownies to be. (I like mine more solid so I baked these for 1 hour).
  4. Enjoy as soon as they've cooled down enough to cut'em up and grab a slice or, just to be extra-fancy and extra-indulgent melt 1 oz of dark chocolate and drizzle it over the brownies.

    • Thanks, Kit!!!!!! Sweet Potatoes are one of those foods that when you add them to a recipe – you literally can’t tell what it is (unlike I tried baking with beets – for the natural color red velvet cake – and it tasted like… beets 🙁 ). At the same time sweet potatoes are naturally sweet and fat-free – they make a perfect base for a gooey extra low-calorie brownies!

      Everyone likes brownies! And that’s where the moms can get creative ☺ I know some recipes where they hide stuff like spinach and cauliflower in their brownies to get their kids to eat more veggies. And the kids eat them just because when it’s mixed with the chocolate – you can’t really tell what’s in it! Now, I’m not very big on spinach in my brownies. 🙂 And my kids know that they have to eat their veggies – or there’s no dessert for them at all! ☺ But the sweet potatoes – they really don’t taste like a veggie in the brownies! They’re pretty neutral. And they ARE healthy &low-calorie!

    • Hi, Tara! Thanks for asking! If you are going to be using the coconut oil – then yes, I’d melt it before adding it to the blender. For this very reason (I don’t want to bother about an extra step 🙂 ) I like using the avocado oil instead: it’s neutral-tasting and best of all it has one of the highest smoking points amongst all oils! 🙂 If you have any other questions, please let me know!!! 🙂
